What type of coating is better for giving sushi-sashimi knife soft wood handle grip?

This sushi-sashimi knife wood handle will be exposed to significant moisture and direct from water every day , please advise me for your great thought, Thank You Very Much!

I would use mineral oil, available at any drug store. It’s safe to use around food and works well (I use it on cutting boards). It will require reapplication. If the wood is very dry, coat it once a day for a week, once a week for a month then once a month after that.
