Will food react adversely to Copper or Galvanized Steel counter tops?

I’m thinking of putting a metal surface on my kitchen counters. Does anyone have experience or information?

Copper is very reactive and will be discolored by both acids and bases. It will also cause some foods to discolor and effect their taste.

Galvanized steel is a coating of mostly Zinc. It is intended to protect the steel inself and not anything on its surface. Actually, the Zinc is meant to oxidize slightly (i.e. discolor) in normal exposure to the environment. In case of food products, the zinc will have a similar effect as the copper although to a lesser extent. I would be most concerned about the zinc coating chipping off over time and getting in your food. It will not only look terrible but be a physical hazard.

I assume that you are considering putting sheet metal over your countertops. The only practical choice is a quality stainless steel (300 series or 18-8). I say quality SS because the lower grades (400 series, 17-4, 15-5) will actually rust over time. SS is more expensive than the galvanized sheet but a bit cheaper than copper.
