Can a plain stainless knife be sharpened enough to cut a steak?

I have some mooncrest oneida knives that have a serrated blade. I was thinking about sharpening the serrations off, and using them as steak knives.

Many of the knives today are “case hardened” which means a very little of the immediate surface has been tempered so when grinding that small,thin part off, your knife will not hold a sharp edge, and most stainless knives are not good without an alloy to hold an edge anyway.
There are many very good knives containing stainless, but they are expensive, and even those will not hold a sharp edge when ground too much.
