Best craft knife (X-Acto knife)?
Looking for a general good-quality craft knife, must be durable and able to hold up for tougher stuff– like cutting thin cardboard.

I’ve used nothing but the standard X-Acto #1 handle with #11 blades for almost 35 years now… same as your Gripster without the rubber coating.
I would REALLY recommend going with X-Acto since they’ve been around for so long and it’s more likely you’ll find replacement blades as the years go by. Heck a 15 pack of blades is only $7 !! I tend to go through blades rather quickly.
For cutting thin cardboard, make sure you get a cutting mat (so you don’t damage your table AND it is easier on the blades) and a metal straight edge !!
