A whetstone is probably the most common knife sharpener used by those who sharpen their knives at home. Be sure to take your time when first beginning this method. You can then speed up once you have gotten the hang of it. Once you have sharpened each side of the knife, you will want to rinse the knife as well as the stone. Ensure that you immediately dry the whetstone, and keep it dry between uses.
Sharpening steel is a long rod that is used to sharpening your knives by sliding them up and down the sides. Propping the rod on a cutting board is helpful. It may take a bit more learning and practice to use the steel than it would to learn how to use the whetstone. Make sure you do to one side what you do to the other. Wash the knife and steel rod after each sharpening.
It is a good idea to learn how to use a manual knife sharpener if you have a lot of knives. The electric one may not work well for you, or you just prefer to do it yourself. It is not hard to sharpen your knives, especially once you learn how to do it correctly. It will definitely be easier than the alternative, which is shipping them off and hoping they come back looking good.
