How did the two different methods of using knives and forks (Europe and the US) come about?

Americans cut food with the knife held in the right hand and the fork in the left, then put the knife down on the edge of the plate and switch the fork to the right hand, hold it right-side-up, take a bite, switch the fork to the left hand and repeat the process. Europeans generally hold the fork upside down in the left hand and cut with the knife in the right hand, using both knife and fork repeatedly without having to set either down. I heard that the European system came about because Queen Victoria was left-handed, and it was polite manners to copy how she ate. But I haven’t been able to verify this, though I have tried. I do know that the American style came from the American colonial period.

There are a couple of theories.
“Observe that at the time of the first American settlements arriving from England and other places, the use of the fork had not yet become widespread in Europe. In particular, England was one of the last countries to adopt its widespread use. For this reason, American colonies remained unfamiliar with the use of the fork and therefore adapted a method – in this author’s view, a decidedly ineffective method – that eventually came to be known as the zig-zag method.” See the link for more info on the alternate theory.
