the one in the middle…what type of steel is it and if i decide to quench it should i do it with water or oil

That is a Benchmade CQC7, or if I remember correctly, the 970 model. Very popular in it’s time. A collaboration piece with the knife maker Ernie Emerson, who eventually took the design back and started making it in his own production house under the Emerson name.

The Benchmade version generally was made from ATS-34 stainless steel. It is a bit tricky to heat treat, but if you are going to fool with that you would need oil, or a salt bath. There were a few toward the end that I think were made from D-2, but those would indicate it on the blade.
